Freekeh, Zaytoun

Freekeh is a grain with a coarse texture and a nutty, earthy flavour. It has a smokiness and heft and can absorb the flavour of anything with which it shares a pot. Play around with it in soups and stuffings, pilafs and one-pot dishes.
